Chef Colin Clague joins Nick Alvis and Scott Price for one-off dinner

They’ll be serving up their signature dishes from their decade in Dubai.

A slew of foodie pop-ups have taken over Dubai in recent weeks with chefs Himanshu Saini and Reif Othman joining forces at Trèsind Studio, and the team at 21 Grams collaborating with The Mattar Farm for an evening social club.

The trend continues with Chef Colin Clague joining Nick Alvis and Scott Price at folly for a one-off dinner on Tuesday 2 February. Having spent over a decade in the region, the local chefs have helped carve Dubai’s culinary scene, developing homegrown concepts across the city. They will showcase their best dishes for diners on the night.

Their six-course menu highlights the very best of their respective careers at top restaurants Zuma, Ruya, Table 9, Q’bara and or course, folly by Nick & Scott. The tasting menu will be accompanied by premium pairings and a schedule of live entertainment throughout the evening. 

For starters, guest can expect Zeytinyagli fava beans, grilled bruschetta, compressed cucumber and feta from Ruya. Slow roasted baby beetroot, goats cheese and yoghurt biscuit crumb from Ruya, and butterhead lettuce, mustard and sour cream from folly by Nick & Scott.

Hot starters look set to include folly by Nick & Scott’s popular crispy hens’ egg with pancetta and maple syrup and grilled quail wrapped in vine leaf, pistachio labnah and honey from Q’bara.

The fish course includes prawn briouites with brik pastry and harissa from Q’bara and scallops, with hoi-sin and toasted cashew nuts from Table 9. While the meat courses involve folly’s saddle of lamb accompanied by whipped pine nuts and salsa and marinated duck breast with honey sancho glaze from Zuma.

A pre-dessert of Q’bara’s baklava will proceed with a trio of folly’s top desserts such as chocolate, root ginger and milk, blood orange cheesecake and rhubarb and custard.

The event is a celebration of some of Dubai’s top culinary talents and is likely to sell out so get those reservations in quick.
