One Palm Jumeirah Dorchester Collection is set to welcome SHIMA. The new Japanese restaurant offers beachfront dining and beautiful views. Chef Koyi Tanabe will be behind the culinary concept, and here’s what to expect.
Chef Koyi is of Japanese heritage, and was born in Lima, Peru. He has previously worked with celebrity chefs and in MICHELIN Starred restaurants across Europe, Middle East and South America.
SHIMA will showcase Japanese flavours, and aims to take an avant-garde approach to its menu. The menu brings together fine flavours and premium ingredients, and the dishes will be presented in an artistic way.
SHIMA’s signature plates range from the Chutoro Sogigiri, which combines scallops, mizuna leaves, and spicy soybean paste, to the Hamachi Nigiri with mentaiko sauce, garlic confit and yuzu skin. Dishes also include Ise Ebi Tempura with lobster tempura, truffle and coral mayo, and the King Crab Leg with kanimiso, mirin hollandaise and Amalfi lemon gel.

LAVITA Beach Club is an Italian concept, and draws its inspiration from glamorous coastal lifestyle. Chef Giuseppe Pezzella is behind the beach club menu, which includes fresh catch of the day, seafood feasts and artisanal pasta. Guests can arrive in style by boat to the Jetty Lounge, and the venue hosts live music and entertainment.
